Oatmeal Golden Raisin Cookies with Salted Caramel Chips
New take on oatmeal raisin cookies
Ingredients
- 1.5 Sticks Butter, softened
- 3/4 Cup Granulated sugar
- 3/4 Cup Light brown sugar, packed
- 2 Large Eggs
- 2.5 Tablespoon Pure vanilla extract
- 1 Teaspoon Baking soda
- 1 Tablespoon Ground cinnamon (Ceylon or Vietnamese cinnamon is best)
- 1/2 Teaspoon Sea salt
- 1 1/4 Cups All purpose flour
- 3 Cups Rolled oats, quick cooking or regular
- 1 2/3 Cups Salted caramel chips
- 1 Cup Golden raisins

Pre-heat oven to 350⁰F.

Beat the butter, granulated sugar, and light brown sugar in a large bowl until well blended.

Add eggs and vanilla extract, blend thoroughly.

Stir together flour, baking soda, ground cinnamon and salt in a separate bowl.

Gradually add the flour mixture to the butter mixture, beating until well blended.

Stir in oats, salted carmel chips, and golden raisins, mix well until incorporated.

Drop by spoonfuls onto an ungreased cookie sheet.

Bake 8 to 10 minutes or until golden brown.

Cool slightly, than remove from cookie sheet onto wire cooling racks.
Notes
Really good with a glass of milk or coffee.
